You have to make this! So quick and easy and SO good. And not entirely unhealthy either, though there is quite a lot of cream involved (but it's whipped and therefore full of air - so that's OK).
Cranachan is apparently often served for a Burns Supper, but whatever the occasion it was delightful to feast on fresh raspberries in January.
Take 3oz of porridge oats and toast them in a dry frying pan being careful not to burn them. Whip a pint of double cream (here in the US I can only find whipping cream which will do at a pinch, but it would have been even better had I been able to use decadent double cream).
Stir in some 3 tablespoons of runny honey, a punnet of fresh raspberries and several tablespoons of whisky. Or, if you're me and want to share it with your tiny daughter, substitute a few drops of vanilla essence for the whisky. And no, it's not half as good that way.

We made this once on NYE when our Scottish friend Mandy came to dinner. She also forced us to cook haggis, neeps and tatties, and made us watch repeats of Rab C Nesbitt, which may as well have been in Latvian for all we we understood of it.
The Cranachan stands out in our memory as the most successful aspect of the evening.

Ok I feel like a bad Scot, I've nver had this!
How bizzarre because it seems like something I'd have sniffed out decades ago and used Burns as an excuse to eat it. But where on earth do I get fresh berries in January? I could lay my hands on frozen organic ones but not sure if they would do as well, a bit mushy.

I think frozen raspberries might work. Yes, a bit mushy, but the 'texture' in the dish is provided by the toasted porridge oats which are deliciously nutty.
And you would get to make it with double cream and WHISKY which is much more important.

Mmm, looks lovely...had a belated Burns Supper the other night - haggis, neeps and tatties...miserable failure! Almost started on the whiskey to console myself!! Should've just had cranachan!
